Fourth-generation Borders farmers
Oink was born out of the 1999 pig crisis, when a Scottish Borders farming family started roasting their own hogs rather than watch the industry collapse around them. Victoria Street has been serving rolls from the window since 2008.
Every day a whole hog goes into the roaster, and it's carved and pulled right there in the window until it's gone.
